Overview

  • Food service establishments that discharge to the Publicly Owned Treatment Works (POTW) are required to have a grease removal system. Grease interceptors shall be located in the food service establishment's lateral sewer line downstream of all fixtures which may introduce grease, and upstream of the facility’s connection to the POTW.
  • Outdoor underground grease interceptors shall have a minimum capacity of 1,500 gallons, two compartments and shall be capable of separation and retention of grease and settleable solids.  All outdoor interceptors shall have a sample manhole (minimum 10” diameter) on the effluent line. 
  • If space limitations do not permit an outdoor grease interceptor, indoor interceptors may be used pending an approved variance issued by A.C.C. Public Utilities Department. Indoor traps shall have a minimum capacity of 40 pounds.
